云磨山酒好在哪里

一是:粮食的投入比高。云磨山酒为清香型白酒,为纯粮发酵,坚决不加其他辅料,其淀粉率可达30%之上,而其他香型的淀粉率一般在15%—19%。

二是: 小分子的酒更柔和。白酒的生产即是将富含大分子物质的高粱经发酵提纯等工序分解成小分子醇类、脂类等物质,小分子结构的酒可以快速渗透人体的各个系统,人体也比较容易吸收,不易醉,口感柔顺,可以实现快速醒酒。

三是:地缸发酵的酒口感好。在地缸发酵过程中,可以保证酒醅自然发酵,免受缸外杂气侵扰,使口感更醇美,酒醅渐趋臻美,酒醇柔恒久。中国食品发酵工业研究院对于清香型白酒曾做过相关研究实验,研究结果显示地缸发酵可以做到有效的隔绝细菌,也可有效避免有害微生物污染和杂味的产生,提高洁净度。

四是:一“清”到底。清蒸二次清发酵工艺,使原料中的淀粉糊化,便于大曲微生物和酶的糖化发酵,产酒成香。同时,挥发掉原料中的邪杂味,使蒸得的酒落口爽净。整个过程始终突出"清"字,保证了云磨山酒清香纯正的特点。

五是:“微氧循环”愈存愈香。云磨山酒采用陶坛封存,空气中的氧气能进入坛内,与酒产生“微氧循环”,使坛内酒液产生呼吸,从而加速酒的酯化、氧化、还原反应的速度,辛辣味减少,增加了酒的芳香。陈化过程中甲醇等有害物质进一步挥发,酒体变得醇和;空气透过缸壁与酒液接触,缓慢氧化,使酒产生成熟的老陈味;同时酒中的酒精分子与水分子会以氢键形式进行缩合,从而使酒的口感变得更加柔和、适口。
